Mmmm, these were so very tasty...
What you'll need is a package of chocolate sandwich cookies, a brick of cream cheese, sucker sticks, sprinkles, Candy eye balls, and most importantly, Velata white chocolate. Of course, any flavor of Velata chocolate would do, but the white is tasty with the chocolate sandwich cookies.
Set your cream cheese out so it can become soft.
Ground up the entire package of cookies in a food processor. If you don't have one, you can put them in a gallon storage bag and crush them with a rolling pin or something heavy. If you ever see a food processor on sale, buy it!, it makes tasks like this infinitely easier.
In a large bowl combine the crumbs and the cream cheese. If your cream cheese isn't soft enough yet, unwrap it, and put it on the microwave on defrost until it is. Be careful not to melt it though. Mix the two until thoroughly combined.
Line a cookie sheet with wax paper (or an empty cereal bag is what I used here). Form the dough into ball shapes, place on sheet, and add a sucker stick. Place in the freezer.
While the pops harden, place your chocolate in the warmer.
Once the pops are hard enough, dip them in the chocolate, add the sprinkle hair and the eyeball(s), and poke into an overturned collander. Voila! Monster pops!
The nice thing was that I only made one for each of my children, then put the remaining pops into a freezer bag to store for another day. The chocolate is so easy to warm up at a moment's notice that they make a quick, easy treat whenever you need it.
Plus, imagine the variety you can come up with! Next I want to try Nutter Butter Monster Pops with dark or milk chocolate. Yummmmmm!
